Whether you're a seasoned pitmaster or a weekend griller, good equipment makes grilling safer, faster and a lot more fun. Here's what belongs in your kit and what to look for in each piece.
The short answer
Start with long stainless tongs, a wide spatula, a basting brush and an instant-read thermometer. Add heat-resistant gloves and a good grill brush, then level up with a smoker box, rotisserie kit or grill basket.

A clean grill cooks better and flares up less. Wire-bristle brushes are still popular because they work, but coil brushes or nylon scrubbers are a good choice if you're worried about shedding bristles, and they're safer on porcelain-coated grates.

Charcoal fan? A chimney starter lights your coals in 15 to 20 minutes with no lighter fluid, which can taint the flavor and makes lighting less predictable.
